Clermont-Ferrand (Clermont-Ferrand) is located in the south of the central part of France. This capital of the Auvergne region and the Puy-de-Dôme department grew on the slope of an extinct volcano, on the so-called Central Massif, a mountain ridge, at an altitude of more than 400 meters above sea level. Here everything is unusual: starting from the surrounding landscape and ending with the double name of the city, symbolizing the end of the struggle in the centuries between the Earls of Auvergne and the Bishops of Clermont.

Clermont-Ferrand residents have something to be proud of. The famous Michelin tires and the company's no less famous Red Guide - one of the most respected restaurant ratings around the world - comes from the city of extinct volcanoes.

The first guides issued by the Michelin brothers were distributed free of charge and were a list of places that could be useful to the traveler. Demand for this kind of information has led to the fact that since 1920, guidebooks are beginning to sell, and restaurants with high prices are marked by one star in the shape of a flower. The content of the guide was repeatedly transformed, and as a result, six years later, a restaurant rating was unique for its time, where the price classification was based not on price policy, but on the level and quality of service.

History and culture

Up until the 17th century, Clermont-Ferrand was nothing but two different cities. The ancient Clermont, with its halo-Roman roots going back centuries, served as the capital of the bishops. Medieval Montferran feuded with the governors of God on earth and belonged to the counts of Auvergne. In 1630, the edict of King Louis XIII united them and created a rather fragile tandem, the viability of which had to be supported by other edicts. The center of the new city was Clermont, and the opposition Montferrand actually turned into a "suburb."

All monuments of architecture are concentrated around the Cathedral (Cathédrale Notre-Dame-de-l'Assomption). The campus is also located in Clermont.

Generally speaking, modern monorail trams (called "Fleur de Lave" or "flower of lava") - the fastest way to travel around the city. Tram A connects the square de Jode with the medieval Montferrand.

Kitchen and restaurants

The Clermont-Ferrand cuisine is typical for the Auvergne region, not so rich in products as the neighboring ones. The main ingredients: famous cheeses, lentils, potatoes, etc. Among the local traditional dishes, it is necessary to allocate tripoux d'Auvergne scabs stuffed with beef giblets mixed with spices; boiled brisket with lentils (petit salé aux lentilles); truffade, familiar to every Russian hostess called "potato in French", and aligo (aligot), a strongly modified version of the truffade.

The name of the dish "aligo" is borrowed from the Latin language (aliquod) and is translated as "something". According to legend, this simple recipe was invented by three bishops from different departments. Once, meeting on the border of Averon, Cantal and Lozer, hungry clergymen decided to have lunch, and each of them got what he had, namely - potatoes, cheese and butter with milk.

Clermont-Ferrand is famous for its five cheeses, certified according to A.O.C. These are Cantal, Saint-Nectaire, Bleu d'Auvergne, Salers and Fourme d'Ambert. The most famous and oldest Cantal cheese is mentioned in the works of Pliny the Elder, an ancient Roman writer (1st century AD).
