What currency is more convenient to pay in the markets and in the shops of Turkey?

In Turkey, in shops and markets, and almost everywhere accept both USD and EUR, and in general the Turkish currency is Turkish lira (TRY). Many retail outlets try to present their prices in EUR, but they can be safely "converted" into USD with the "specified digital signs" retained.

That is, if the price tag says 100, and the seller says that this price is in EUR, then orient it for the same amount, but in USD, this will save your money. In general, pay in dollars
