The maximum is to live in a farmhouse and buy products from local farmers, and work ... there is not enough unskilled labor for your citizens, because this segment is seized by illegal migrants. I understand that we are not talking about working on a farm for the sake of earning - rather, for the sake of pleasure, but Malta for this is absolutely the wrong direction.
Ecotourism in Malta is possible only in the form of walking tours, organized by various thematic NGOs, as well as spontaneous - but here one must be very careful with hunters and poultry people, because for them eco-tourists are a threat to their hobby, which is not always legal.
Unfortunately, at present the hunting lobby has become even stronger here, and for the first time in the last 5 years it was again allowed to catch the birds with cannons. Also, from time to time these very different NPOs arrange visits to nature reserves and farmlands, but these are usually lectures and tastings. I've had a couple of times to collect olives for fun and for the sake of curiosity, but it was organized by Maltese friends.
The island of Gozo is open to all year round, there you can rent at least farmhaus, at least an apartment, even a hotel. In the low season there is much more pleasant, as more greenery - in the summer it is scorched desert, as, indeed, the rest of the islands of the Maltese archipelago.
